Grilled Watermelon with a Honey Glaze

"This is so easy, and so incredibly delicious. When I grew up, Mom used a minted honey which we got from a local farmer, and it was the best. These days, I just use the 'Honey Bear.' It can be eaten as is (just a slice); or, diced in a salad over a bed of greens which is delicious. Add some fresh mint, a squeeze of lime, and maybe some crumbled Feta cheese for a delicious salad."

Step by Step Method
Step 1
Watermelon ... First, lightly salt the watermelon on each side, and set on a wire rack to drain - a good 15-20 minutes. Then, rinse and pat dry.
Step 2
Grill ... I microwave the honey, just a few seconds to loosen it up. Brush the honey on the first side; and place honey side down on the grill. Then, brush the second side with honey. Grill a couple of minutes (2-3) per side, until you get some nice grill marks. Remove from the grill, and season lightly with salt and pepper.
Step 3
Serve and ENJOY! ... I like them simply served as is. But, cut up the watermelon and toss with fresh mint, a squeeze of lime, black olives, and some crumbled Feta for a delicious salad. It is a fantastic summer dish!
