Step by Step Method

Step 1

In a skillet over medium heat, heat the olive oil. Add onions, salt, nutmeg and pepper. Cook, stirring occasionally until browned and tender (20-30 minutes).

Step 2

Spread about 1/4 cup of the onion of each of 2 slices of bread; cover with cheese and top with remaining bread slices. Spread butter on top of bread.

Step 3

Heat a skillet over low heat (I would use the same skillet as I cooked the onions in) and place sandwiches, buttered side down in the skillet. Grill sandwiches for 5-10 minutes per side; cover pan during last few minutes of cooking to melt the cheese.

We loved this recipe...in fact I can see eating this without the cheese...the onions are amazingly delicious...it must be the touch of nutmeg...the hubby wanted processed cheese on his...it really does melt the best...I had half of a sandwich and used Swiss cheese...which doesn't melt all that well...I subbed the rye with sourdough...made for "Billboard" tag game...

Better than a regular grilled cheese it by adding onions and this recipe fit the bill. The addition of nutmeg peeked my interest and it wasn’t overpowering, but just right. Used a combination of cheese odds and ends that I had in the fridge which included Swiss. Came out excellent. Thank you, ellie, for sharing.

I made this using chopped red onions and Swiss cheese and I loved the sweetness of the onions. The nutmeg does peek through nicely in this grilled cheese. It is a make again.

Exceptionally good grilled cheese! I used Monterey Jack and American cheese and whole wheat bread. The onions made this unexpectedly sweet and delicious!

We really like the nutmeg in the onions! DH said after his first bite that it was "awesome"! I did leave out the salt, and used homemade grainy bread. Serve this with chipotle ketchup. Will be making this great sammy again! Thank you for sharing Ellie. Made for Billboard Recipe Tag.
