Step by Step Method

Step 1

Cut the crust off of each piece of bread (so not to waste the pieces of crust, they can be made into croutons). Use a rolling pin to flatten each piece of bread. Lay a piece of cheese on each piece of bread. Tightly roll each piece of bread with the cheese in the middle.

Step 2

Heat a large skillet on low to medium heat. Add some butter to the pan. With a pair of tongs, gently roll all sides of each roll up in the melted butter and lay the roll ups seam-side down in the pan.

Step 3

Lightly brown each side of the roll up. If the seam-side starts to open, use the tongs to squeeze the seam together.

Step 4

Remove from the pan and serve while warm.

These were a little tricky to make, but they were FUN to eat. It was easier to roll these when I put all of the cheese on one side of the bread and rolled, so the bread kind of stuck together before I put them into the pan. I served with a marinara dip. I used American & Cheddar cheese. I put some ham in my husband's roll-ups, which made the roll-ups start to unroll while they were cooking. So they were more challenging (but totally worth the extra effort). Once the cheese started to melt, I pulled them out of the pan and re-rolled, using the melted cheese as a glue. My kids were at school when I made these but they would have LOVED them and I'll make them again some day for them to try.

I'm so glad I saw you as Chef of the Day & took time to look at your recipes. Grilled cheese has a rep for being the ultimate comfort food & your creative & easy-fix recipe proves the point again. Sliced American cheese & cheddar are hard to find here in Iceland & expensive if you do, so I used Gouda cheese & loved the result. I think this works best w/a dipping sauce like marinara or Ranch Dressing. I used a herbed yogurt sauce as shown in the pic. Thx for sharing your tasty recipe w/us. :-)
