Step by Step Method

Step 1

In a food processor, chop the spinach green onions and parsley. When finely minced, add eggs and mix until combined, add pepper in.

Step 2

Add 1 Tablespoon butter at time into buttered skillet, add 1/4 of mixture. Cook then flip, add ham and cheese, with the ham showing out the edge not cheese. Repeat.

What a treat. Great way to have the family eat their spinach . This is a do again recipe for sure. Will be perfect for St Patrick's Day.

What a great breakfast this made enjoying the parsley, spring onion and baby spinach plucked fresh from the garden and two free range eggs (I scaled back for 1 serve) and a nice smoky ham with some grated vintage cheddar cheese and a slice of toast made for a good feel good breakfast, thank you dienia b, made for Billboard Recipe Tag Game.
