Step by Step Method

Step 1

Wash and separate cauliflower into florets and cook in a large saucepan in boiling water until tender, about 15 minutes. Drain and arrange in a 9 x 13-inch baking pan.

Step 2

Preheat oven to 300°F.

Step 3

In a saucepan, melt butter; add flour and stir over high heat until browned slightly. Add milk and cook, stirring, until thickened. Add cheese; cook until cheese is melted.

Step 4

Slightly beat eggs in small bowl. Whisk in 1/2 cup of the hot cheese sauce into eggs, to temper.

Step 5

Whisk egg mixture gradually into the remaining cheese sauce. Season to taste with salt and pepper.

Step 6

Pour over cauliflower and sprinkle with paprika. Bake for 15 minutes, until bubbly.

We absolutely love cauliflower and this feta cheese sauce was really delicious. Simple to make and a really nice flavor that doesn't overpower the veggie.

I added 2 teaspoons of Greek with feta seasoning as well as about a tablespoon of fresh oregano, but will add more seasoning next time as this was still very, very bland. Rated high for technique since the texture was perfect and the cheese sauce was easy to make, but it was definitely lacking in flavour.

This super delicious dish was the exactly as I needed: I wanted to serve cauliflower in a new for my guest and I wished that this would be appreciated! It worked perfectly, was easy and the result great. I only increased the temperature of the oven a little bit for browning! Thanks a lot for this great dish it was delicious and it has been appreciated very much. :)
