"My Gram's apple pie was over the top good. The recipe was never written down. This is my attempt but it's not there yet. The filling is "soupy" the way Gram made the pie. If you want a thicker filling increase the flour to 1/2 cup. Don't tell but Kitten's pastry is better than Gram's. http://www.recipezazz.com/recipe/kittencals-buttery-flakey-pie-pastry"

Step by Step Method

Step 1

Prepare pie crust so it can chill while you prepare filling.

Step 2

Peel, core and slice apples. Toss in large bowl with lemon juice.

Step 3

Mix together sugars, cinnamon and flour. Reserve 2 tablespoons of white sugar. Sprinkle over apples and toss to coat.

Step 4

Roll out half of pastry and place in 9" deep dish pie pan. Ease to fit. Leave pastry hanging over edge.

Step 5

Spoon filling into prepared pastry. The dish should be full with a mound in the center. Dot with the butter.

Step 6

Roll out second half of pastry. Place on top of filling. Seal and pinch edges. Cut off excess pastry from sides. Cut slits or a pattern in the top to allow venting. Dust top with remaining white sugar.

Step 7

Place pie on a baking sheet to catch drips while cooking. Bake at 425 degrees for 15 minutes. Lower oven temperature to 350 degrees and bake for an additional 40 minutes.

Step 8

Remove from oven. Cool at least 2 hours before serving to allow filling to set.
