"These claim to be the best Southern Hush Puppies anywhere, made by the most famous hush puppy maker in the world, who was also a favorite cooking member of one of the groups I am in but has now passed. These will have you dancin' round the table. Time listed does not include chilling time (1 hour)."

Step by Step Method

Step 1

Sift together corn meal, flour, baking powder and salt in medium mixing bowl.

Step 2

Add milk and eggs (1-2) and stir until well mixed together and moist.

Step 3

Add onion and jalapeno (optional), and stir until mixed together.

Step 4

Set in refrigerator to chill at least 1 hour.

Step 5

Cooking: Drop the hush puppy batter by teaspoonfuls into deep fryer basket (hot peanut oil heated to 350 degrees).

Step 6

Cook until a dark golden brown on all sides.

Step 7

Remove, and let drain on paper towels.

Living down in NC for 5 years I had a lot of hush puppies. I love them and wanted to try these. They are really good, with a little spice kick from the jalapenos and the flavor is great.
