"I made this recently and used my Vegan Green Goddess dressing recipe (posted here #10039) I used one large bowl for this, you can use four separate bowls or go with the one large. If you make this salad and pair it with my vegan Green Goddess dressing it make for a very low fat very healthy salad"

Step by Step Method

Step 1

Place the drained chickpeas in a mixing bowl, then mash with a potato masher (there should be no whole chickpeas left but they should not be completely smooth like hummus, you want a little texture. Mix in the capers and 2 tablespoons of the Green Goddess dressing.

Step 2

TO ASSEMBLE: place the lettuce leaves in 4 wide bowls.

Step 3

Place a handful of potato slices and green beans in each bowl in piles on top of the lettuce leaves, along with onion slices and cherry or grape tomatoes.

Step 4

Place a scoop of the mashed chickpea mixture in the middle, then top with olives.

Step 5

Garnish with chopped parsley and avocado slices.

Step 6

Serve the dressing on the side.
