"This delicious and different salad dressing is borrowed from Ellen Ogden's book "From the Cook's Garden." It is great on spinach or dark greens, and also makes a cool sandwich spread."

Step by Step Method

Step 1

Put the cheese, vinegar, basil and garlic in a blender and pulse to combine.

Step 2

Add the tomato; puree.

Step 3

With the blender running gradually add the oil through lid until the mixture is smooth.

Step 4

Season with the salt and pepper.

Step 5

Store in airtight jar in refrigerator for up to 2 weeks; shake well before using.

Excellent dressing! This dressing has a perfect taste and while it sits in the fridge the flavors meld really well, making it even better. Had it on a simple romaine alongside salmon.
