Step by Step Method

Step 1

Cook the gnocchi in a large pan of boiling water according to pack instructions. Chop the spinach a bit and plunge into the same pan, then immediately drain through a colander and shake off any excess water.

Step 2

Pour heavy cream in a medium sauce pan with the nutmeg, garlic powder, black pepper,2 Tbs Parmesan and blue cheese.Stir over medium heat until bue cheese is melted.

Step 3

Pour a little of the sauce over an oven proof dish. Mix in the walnuts to the remaining sauce. Add the hot, drained gnocchi and spinach and cover with the rest of the sauce. Sprinkle the dish with the remaining 2 Tbs Parmesan.

Step 4

Slide the dish under a hot grill until the cheese is bubbling and golden. Serve immediately.

What a great gnocchi dish! Simple, but impressive – came out scrumptious, silky, just wonderful. Because hubs is not a fan of blue, I had to hide it a bit, so used a bit less and used a milder blue, also included Asiago and Parmesan and increased the total amount of cheese bit by bit until the desired flavor was reached. Also in place of walnuts, added toasted almond slivers and increased the sauce amount somewhat. Goodness, this is so good. Best of Stuff, MsPia! Thank you for sharing.
