Step by Step Method

Step 1

Cook the gnocchi according to packet instructions, set aside, drained and separated

Step 2

In a skillet heat the pasta sauce add spinach and cook for a minute or two until the spinach is just wilted

Step 3

Add Gnocchi to the pan and mix

Step 4

Transfer gnocchi to a lightly oiled oven proof dish. Spoon the mascarpone over, scatter the parmesan curls on top Place under broiler, not too close, until everything is heated through and the casserole is bubbling and golden - It only takes a few minutes

So easy, but good enough for company. I used a tri-colored gnocchi mix. I think it would be good with goat cheese in place of the mascarpone, too.
