"The original was not GF. If you would like to do it without gf flour, just sub 2 cups of regular flour and leave out the xanthan gum."

Step by Step Method

Step 1

Preheat oven to 350°. In a medium bowl, beat the coconut oil and butter with an electric mixer until pale and creamy, about 3 minutes.

Step 2

Gradually beat in the sugar or honey until well blended. Add the maple syrup, egg and vanilla and mix until blended.

Step 3

Add the flour and the xanthan gum and mix well. Fold in the pecans.

Step 4

Drop by tablespoonfuls on ungreased cookie sheets. Spread them out, if you like, as they don't spread in baking. Bake for about 20-25 minutes, until golden.
