"This is a nice dessert for the holidays for a change of pace. I always use my recipe for Grandma Brown's Gingerbread, but you can use whatever your favourite is as long as it's the old-fashioned cake kind. Prep time is stove top time, cook time is refrigeration time. NOTE: gingerbread is not included in nutritional facts"

Step by Step Method

Step 1

Whisk together the eggs, sugar and cornstarch in a saucepan. Whisk in the milk and heat to a simmer, whisking constantly.

Step 2

Stir in the candied ginger and vanilla; remove from heat and allow to cool to room temperature.

Step 3

Arrange the gingerbread cubes in the bottom of a large glass bowl; sprinkle with the sherry and top with the fruit.

Step 4

Spoon the custard into the bowl, spreading evenly to cover.

Step 5

Cover and refrigerate until set, at least two hours.

Step 6

Top with whipped cream, and garnish with candied ginger pieces and candied cherry halves.
