"Furr's Cafeteria is a restaurant chain here in Texas known for their butter chess pie. I found the recipe on-line and it was supposedly posted by a former employee of Furr's. I don't know how true this is, but I do know the pie tastes exactly like the restaurant version. Warning!!! This pie is very sweet so you might want to add some lemon juice and lemon zest to add a little tartness to it. I suspect you could also add some cocoa if you wanted it to be chocolate. I have prepared the recipe as originally written and it turned out really well."

Step by Step Method

Heat oven to 350°F
Step 2
In large bowl, combine sugar and flour, stir in eggs and buttermilk until blended. Add butter and vanilla extract.
Step 3
Pour filling into pastry shell.
Step 4
Bake for 45 minutes or until the filling is set. Check for doneness after the minimum baking time by gently shaking the pie. The center should be set with a slight jiggle.
Step 5
Cool on wire rack.
