"Really there is no way of eating these without getting covered with confectioners' sugar lol! When you make the batter you will think there is not a lot but trust me this makes a ton, three-quarter cup of batter goes a long way and makes one huge funnel cake, you should get 8-10 funnel cakes, as stated you may find you have the perfect texture or it may be too thick, if you find your batter is to thick and will not go through your funnel add in only a tablespoon at a time, but beware if you add to much water the batter will become to thin and the cakes will not taste good. The cakes absorb oil as they fry so make sure you have a fair amount to add into the skillet if needed"

Step by Step Method

Step 1

In a small bowl combine flour with baking powder, salt and cinnamon.

Step 2

In a medium or large bowl whisk eggs until well combined; whisk in milk and water. Add the flour mixture to the wet mixture; whisk vigorously until smooth (do a quick test to see if the batter flows through the hole of the funnel easily, if not add a small amount of water and whisk until smooth, no more than 3 tablespoons of water should be used).

Step 3

Heat 2-inches of oil in a large skillet over medium-high heat (make sure you have more oil handy to add to the skillet if needed).

Step 4

Holding your finger tightly over the funnel hole, using a ladle scoop a SCANT 3/4-cup batter into the funnel.

Step 5

Remove your finger from the funnel hole and drizzle the batter into the hot oil making weaving patterns. Cook until browned (about 45 seconds, depending on how hot your oil is). Working two spatulas turn the funnel cake over and continue cooking until browned (another 45 seconds). Remove to a plate and continue with remaining batter.

Step 6

Serve cakes dusted with confectioners' sugar. YUMMM!
