Step by Step Method

Step 1

In a large frypan heat the olive oil over medium heat; add onion, mushrooms, garlic,celery and corn; saute until the onion is transparent, about 5 minutes. Add salt and pepper to taste and add the chicken broth; stirring well. Stir in the cooked rice, mix well; fry over medium heat for about 15 minutes, stirring occasionally. Stir in the spinach and continue cooking a further 2 minutes just until the spinach starts to wilt. Serve hot.

I made this using a wild rice mix and changed up the veggies a bit and added leftover chicken and it turned out so tasty. Great recipe!!
