Step by Step Method

Step 1

Blanch the beans for 3 minutes or until crisp-tender. Immediately transfer to ice water. Drain well then pat dry with paper towels. Transfer beans to a large bowl.

Step 2

In a small bowl, whisk orange and lemon juice, oil and sugar. Pour dressing over beans and onions. Add orange and lemon zest. Toss until combined. Season with salt and poepper. Top with toasted walnuts or almonds.

Wonderful, refreshing, healthy salad. Yellow and green beans right from the garden. The lemon, orange dressing is just right!. The salad was served in combination with two other salads for a special birthday luncheon for friends. Everyone loved it. Thanks Yancey for posting.
