"This is such an easy spread; and, absolutely delicious on a grilled toasted baguette, seafood, vegetables, chicken, fish, pork, or steak, etc. It is just so simple, but really delicious. Also, just roll it up in a log; and, keep it in your freezer. When, you need some, simply cut off a slice. Obviously, you can vary the amount of tomatoes, garlic, or herbs in this mix. Just adjust it to your liking. This is different than my 'Sun Dried Tomato Butter;' which, has a much deeper flavor. These tomatoes are just lightly pan sauteed until they begin to soften; then pureed until smooth. It is a very fresh tasting butter/condiment. Prep time does not include time for the butter to firm up in the refrigerator."

Step by Step Method

Step 1

Tomatoes ... Add the tomatoes, garlic, oregano, and olive oil to a non-stick saute pan; and bring to medium heat. Saute, for 5-7 minutes, just until the tomatoes begin to soften and pop; stirring often. Season with a little salt and pepper to taste. Transfer to the counter off the heat to cool.

Step 2

Puree ... Also, remove the oregano stems and peels off the garlic. Add everything to a food processor (once cooled), including any juices; and, add the butter and basil. Puree until smooth; season with additional salt and pepper if necessary.

Step 3

Butter Log ... Add the butter to a piece of plastic; then, wrap and roll into a log. Twist the ends tight; and, refrigerate until firm; or freeze.

Step 4

Serve and ENJOY! ... As mentioned, this is great 'condiment,' as a spread on a toasted baguette; perfect on cooked vegetables, seafood, chicken, steak, or pork. It is delicious with so many things; and, very easy to make.
