"At one of my previous workplaces there was a sub shop nearby that made the best veggie subs. Since I left that job, I've ordered veggie subs from other sub shops, but none compared. What set them apart is that they used raw vegetables as opposed to sauted or roasted So, I decided to replicate these subs at home and they resulted in great tasting subs. A couple of weeks ago I went by that old sub shop and picked up a couple of veggie subs for my family and they commented how they liked mine far better than the old sub shop. The quality of the ingredients are essential for achieving good results."

Step by Step Method

Step 1

Slice each submarine/hoagie roll, making sure not to cut all the way through, leaving the end intact.

Step 2

If preferred, toast bread slightly, being careful not to toast too much as best results are achieved when bread is toasty-soft. (Note that toasting the bread is not essential, but up to your personal taste).

Step 3

Evenly place 2 slices of American cheese (optional) on each roll. If toasting the bread, toast while American cheese is layered on the bread as it will melt the cheese slightly.

Step 4

Sprinkle half of the amount of the olive oil over the inside of each roll.

Step 5

Layer and evenly distribute all the veggies starting with the shredded lettuce onto each submarine roll, making sure to incorporate the feta cheese, hots, pickles, etc. in-between the veggie layers.

Step 6

Once all veggies are added in, sprinkle with remaining olive oil and finish with sprinkling the red wine vinegar. Enjoy!

NOTE: The amount given are approximate and depending on the size of your submarine rolls, the veggies may be enough to fill 5 - 6 submarine/hoagie rolls. Also note that the amount of the onions, pepperoncini, hots, olive oil, vinegar, and feta, are up to each persons personal taste

What an excellent sub! I happened to have a jar of Wickles on hand and loved the inclusion of so many fresh veggies! I elected to not use as much olive oil or dill pickles, but the sandwiches were wonderful.Yum!
