Step by Step Method

Step 1

Preheat the oven to 350 degrees F and grease a cookie sheet or line with parchment or foil.

Step 2

Beat egg whites to stiff peak stage. When you lift the beaters, the meringue will stand in peaks.

Step 3

Add sugar slowly, beating to combine, and beat again until glossy and stiff, adding vanilla at the end.

Step 4

Gently fold in the pecans or the chocolate chips (or both)

Step 5

Drop by teaspoonfuls onto the greased or lined cookie sheet.

Step 6

Place in the preheated oven and immediately turn the oven off.

Step 7

Leave them in until the oven cools completely.

Great cookies that are fun to make! So cool how you just preheat the oven and then put them in, turn off the heat and leave them overnight. Very nice for a hot summer day when I didn't want to heat up the whole house with the oven. I made these as directed with both pecans and chocolate chips. I think I would prefer them with just the pecans as the chocolate chips all clumped up at the bottom of each cookie and made the light meringue heavy. These might be nice with some orange or lemon zest added too. Made for the Billboard recipe tag game.
