"Easy and delicious. I like to use medium onions; so, you can serve ... one onion per person. These are so good, and such a nice side dish; something a bit different. I do them on the grill; but, they also work just as well in the oven (although, they may take a few minutes longer)."

Step by Step Method

Step 1

Bacon ... You can prepare the bacon anyway you like. With just a few pieces; I usually use the microwave. Add a paper towel to a plate and top with the bacon slices; then, top with another paper towel. Cook on medium high heat, for 2-3 minutes, check, and cook another 30 seconds until crisp and done. I even use a paper plate, which makes easy clean up. But, you can bake, pan saute, or even use the real bacon crumbles. Whatever you prefer.

Step 2

Filling ... Add the softened butter, bacon crumbles, blue cheese, thyme, and a pinch of pepper to a small bowl; then, mix to combine. Personally, I like to add a couple of dashes of hot sauce - this is optional, and don't add to much, just a couple of dashes. I also don't add any salt, because the cheese is salty.

Step 3

Onion ... Cut a thin slice off of the bottom of the onion (very thin slice), just until it sits upright. Then, slice about 1/2" off the top, and scoop out some of the center of the onion. Not too much; about 1/3 of the center - enough to add 2-3 tablespoons of the filling. This really depends on the size of the onions. As I said, I like to use medium size onions, so 1 onion per person is the perfect serving size. So you may get 5-6 onions with this amount of filling. Also, don't throw out that onion you scooped out. Put it in a small baggie, and in the fridge. It is a great to add to soup, stuffing/dressing, salads, etc.

Step 4

Fill ... Season the inside with a pinch of salt and pepper; then, spoon in the filling. Wrap up in heavy duty foil, or double wrap with regular foil. Wrap up like a 'little present.'

Step 5

Cook ... Grill for 20-30 minutes on medium heat; 25-35 minutes in a 350 degree oven, middle shelf. The first time you make these, just open up the package and check. Every grill and oven can cook a bit differently. You want the onion cooked through, and the onion soft and tender.

Step 6

Serve and ENJOY! ... A perfect side dish. Serve 1 onion per person. And, make sure to pour any liquid from the pouch over the onion. Garnish with fresh chives if you want!
