Step by Step Method
Step 1
For the pancakes combine the flour, egg yolks and half of the milk and mix to a thick, smooth batter and then add the rest of the milk.
Step 2
Lightly whip the egg whites and lightly fold these through the batter.
Step 3
Cook pancakes in the oil or butter.
Step 4
To cook the apples melt the butter and sugar in a medium pan over moderately high heat and add the apples pieces and cook until golden brown but still holding shape.
Step 5
For the sauce pay attention and be patient - sprinkle the caster sugar over the base of a medium frypan and cook over a moderate heat until the sugar starts to melt.
Step 6
Shake the pan, but do not stir, until sugar all melts and is a deep brown and then remove from the heat and CAREFULLY add the cream and butter.
Step 7
You may need to return the pan to the heat to melt the caramel.
Step 8
Serve two pancakes with a couple of apples pieces and a drizzle of the sauce.
