Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Line and grease a large baking sheet with foil. Lay salmon on foil and season with salt and pepper on both sides to taste. Slip lime slices underneath the salmon.

Step 3

Stir together butter, lime juice, honey, and garlic. Pour mixture over salmon. Fold sides of foil up over the salmon (don't worry if it doesn't cover the salmon completely).

Step 4

Bake for 15-20 minutes.

Step 5

Switch oven to broil and cook another 5 minutes. Sprinkle chopped cilantro over the top and serve.

NOTE 1: Don't stress about the size of your salmon fillet. This recipe is very forgiving and works for one very large salmon, a couple of medium-sized fillets, or even several small individual fillets.


NOTE 2: For an even lighter version, you can cut back the butter to 4 tablespoons instead of a half cup (8 tablespoons). Keep in mind though that for a very large salmon fillet, 8 tablespoons is not a terribly huge amount when divided between 4-6 servings.

What a "Flaky" delight...we just loved this sweet and tart salmon dish...I cut back on the butter...and the amount was just perfect for keeping the salmon moist and tasty...the cilantro added a nice touch...served this along side of a cilantro lime rice and steamed asparagus...made for "Players Favorites" tag game...

Excellent dish! The whole family raved about this dish. It hit the marks in all areas: taste, easy to prepare, quick cooking, and pretty on the plate. It is truly company worthy, but easy and quick enough for regular menu rotation. I also liked that it is made with ingredients I normally have on hand. I opted to cut the butter in half and thought it was more than enough. This recipe is going into my Best of cookbook. Thank you for sharing another of your fab fish recipes!
