Step by Step Method
Step 1
Place potatoes in a bowl with cold water. In a separate bowl, whisk together flour, baking powder, salt and pepper. Whisk in the milk and egg until smooth. Let mixture stand for 20 minutes.
Step 2
Meanwhile, preheat oil in electric skillet to 350 degrees. Pat potatoes dry and fry in hot oil until they are tender. Be careful, any water on the potatoes will make the oil spatter. Drain potatoes on paper towels.
Step 3
Dredge the fish in the batter, one piece at a time and place in hot oil. Don't crowd the skillet. Fry until batter is golden brown. If necessary, increase temperature to keep at 350 degrees.
Step 4
Fry potatoes again for 1-2 minutes for added crispiness, drain on paper towels and serve hot.
