"If you are a Velveeta fan, this is great. I use low-glycemic Dreamfield's pasta in this but whole wheat macaroni is also healthier."

Step by Step Method

Step 1

Cook the noodles and drain.

Step 2

In the same pot over low heat, melt the butter, then add the salsa, milk, chili powder and salt and pepper; stir to blend.

Step 3

Add the cheese and stir over low heat until it melts, then fold in the cooked drained noodles and serve.

We enjoyed this nice change to a Mac and Cheese dish...it's really easy to prepare and doesn't take a lot of ingredients...I cut the recipe in half and it came out nice and creamy...but like most mac and cheese eat it while it's hot otherwise you'll be munching on glue...made for "Billboard" tag game...

I made this for lunch today and it was delicious. I liked the addition of the chili powder. It gave it a nice taste along with the salsa!
