Step by Step Method

Step 1

Melt butter gently in a large deep skillet. Add cream. Bring to a boil. Add vodka.

Step 2

Reduce heat and cook on low 3-4 minutes until slightly thickened.

Step 3

Add smoked salmon, salt, pepper and dill. Remove from heat.

Step 4

Cook fettuccine in a large pot of boiling salted water until tender. Drain noodles well.

Step 5

Reheat sauce.

Step 6

Place drained noodles in the pan with the hot sauce. Toss gently over low heat until sauce coats noodles and is thick and creamy. Sprinkle with cheese if desired. Taste and adjust seasoning if necessary.

I scaled it back for 2 serves and was in the middle of making it when the DH changed his mind and decided to cook himself something else up well in my rush as I was hungry and it looked so good I put the lot into one serving bowl and it wasn't till I was near the end of eating it that DH made the commend about it being a big serve and that is when I realized I had scoffed the lot but it was oh so good and well worth it and I didn't get to the side salad. Thanks lazyme for a great recipe, made for Went to Market tag game.
