"These were such a great summer treat! Keeping with my vegan diet I used Silk Strawberry Soy Fruit and Creamy soy yogurt instead of milk yogurt, I also used agave in place of honey. I`m making them again very soon only with raspberries. Cook time is freezer time, If you planning to make and serve on the same day start this earlier in the day as there is about 7 hours of freezer time"

Step by Step Method

Step 1

Place the yogurt in the freezer until almost frozen (about 3-4 hours).

Step 2

In a blender (on low speed) puree the semi-frozen fruit, yogurt, honey and vanilla until smooth (mixture with thick).

Step 3

Transfer mixture to a freezer-safe pan. Cover and freeze about 4 hours until frozen but still able to break apart.

Step 4

Before serving remove from pan and break the frozen mixture into pieces; transfer to a blender; blend until smooth
