Step by Step Method

Step 1

Trim beans and cook in a small amount of water to desired doneness, about 10 minutes; plunge into cold water to stop cooking; drain; add to large bowl.

Step 2

Combine remaining vegetables and canned beans with cooked beans.

Step 3

In a small bowl, whisk vinegar, sugar, salad oil, salt and pepper together;

Step 4

Pour over vegetable mixture and gently mix; store in refrigerator, mixing occasionally, until ready to serve.

I made this up yesterday so it could sit in the fridge and have a chance for the flavors to mix together. I had a spoonful of it last night for good measure, and it was so delicious. I know it will be enjoyed today at our first barbecue of the year celebrating Memorial Day!

Made your bean salad as given, even though there're just 2 of us here, then shared it with a neighbor couple! We all thoroughly loved it ~ So very much better tasting this way than just from a jar off the grocery shelf! I did steam the fresh beans, & at the end used a small amount of salt along with a bit of lemon pepper! Thanks for sharing this recipe!
