Step by Step Method

Step 1

In a food processor or blender, blend the egg, mustard, and lemon juice together for 20 seconds. With the machine running, slowly pour in the oil through the feed tube. The mixture will thicken.

Step 2

Season with salt and pepper to taste, then pulse once or twice to blend.

Step 3

Store in an airtight container in the refrigerator. Best if used within 24 hours.

I'm not adding stars because I haven't tried it. It does sound really good. But I would strongly suggest using pasteurized eggs for safety sake, to prevent any possibility of salmonella from using raw eggs.
