This was such a nice recipe to find... a basic egg salad for left-over Easter eggs! I quadrupled the recipe, to use up the eggs and feed a crowd for lunch today. I needed one that didn't use pickles, so this fit the bill. I used red onion. Thanks, Dee!

I made this as instructed but using 2 more tablespoons of mayonnaise as I like my egg salad creamy and it turned out perfectly.
