"Ever found an empty pan of something in your fridge? I did! I found this recipe in a book and it looked rather bland so I added some of my own tasteful touches and served it to my family. They loved every bite and it was gone in just a few hours. If fresh peaches are out of season the use the best frozen peaches you can find but cut back on the sugar."

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Coat a 13 X 9 inch baking dish with non stick spray.

Step 3

Put butter in pan and put in oven to melt.

Step 4

Meanwhile, in a mixing bowl, blend dry ingredients EXCEPT BROWN SUGAR together.

Step 5

Add milk and stir well.

Step 6

Using oven mitts, remove the baking dish from the oven if butter is melted.

Step 7

Pour batter into dish and even out.

Step 8

Spoon peaches with some juice (if any) evenly over the batter.

Step 9

Bake at 350 for 30 minutes then check for doneness. (Mine baked 40 minutes, sister's baked 30).

Step 10

Cobbler is done when batter rises and browns on top and firm in center.

Step 11

Sprinkle brown sugar over the top.

Step 12

Cover with foil (or other top) immediately so that sugar can warm up and stick to the cobbler.

Just what the doctor ordered! With the peaches starting to fall from the trees in my back yard this is right at the front of my cookbook to be made a few more times this season, and I just might try it when the weather is cooler with frozen peaches. My own of course!
