Easy Quick Tomato Soup (Like Campbell's)
"This reminded me a lot like Campbell's tomato soup, it's good! Don't use no name tomato products for this, use the good stuff. This makes a big pot of soup if you’re not going to use all of it you can freeze it for another time"

I just made this and oh boy this soup is very good, the only thing missing was some spice so I added in some hot sauce, wonderful will be making again!.
- 2 tablespoons oil (or butter)
- 1 small yellow onion, chopped (about 1 cup)
- 2 garlic cloves, chopped
- 1 tablespoon fresh thyme, minced (optional, I added it because I had some)
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon dried oregano
- 1 can (6 ounce) tomato paste
- 1 can (28 ounce) crushed tomatoes (puree)
- 1 can (28 ounce) tomato sauce
- 1 cup chicken broth
- 2 cups whole milk (or light cream if you want it more creamy, I used half milk and cream)
- Pepper, to taste
What You Will Need
No special items needed.
Heat a large pot over medium heat with the olive oil.
Add the chopped onion and cook for 5 minutes until softened, stirring.
Next add in the garlic and stir, cooking for a minute more, then add in the salt, oregano and sugar. Stir and cook for another minute, then stir in the can of tomato paste.
Carefully pour in the crushed tomatoes, sauce and chicken broth. Add pepper.
Stir together and cook for around 20 minutes covered partially with a lid.
After the soup has cooked, pour in the milk and blend with an immersion blender until smooth.
Taste for seasonings and serve.
