Easy Indian Lemon Chicken

Really easy recipe that resulted in lots of tasty sauce, perfect for the basmati rice. I thought that the amount of seasoning was extreme but it was perfect - I wouldn't change a thing. Thanks! :).
- 1 pound boneless chicken breasts (2 pieces, 6-8 ounces each)
- 2 teaspoons crushed ginger
- 2 teaspoons crushed garlic
- 1 teaspoon turmeric
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon garam masala
- 1 teaspoon red chili
- 1 teaspoon paprika
- 2 tablespoons lemon juice
- Salt, to taste
- 8 ounces yogurt (1 cup, beaten)
- 2 tablespoons oil
What You Will Need
No special items needed.
Cut the Chicken into bite sized pieces and rub some turmeric and salt. Set aside.
Heat oil in a skillet and add the chicken pieces.
Saute until slightly golden and almost cooked.
Add the crushed ginger and garlic. Saute for about a minute.
Add turmeric, cumin, coriander, garam masala and red chili. Saute on medium heat until oil separates from the sides. Add the lemon juice.
Beat the yogurt in a bowl. Take the skillet off the heat and mix the yogurt into the chicken.
Bring it back on the heat and keep stirring the whole mixture until it comes to a boil. Reduce the heat and continue to cook for about 2 minutes. Garnish with coriander.
Serve hot with rice or roti!
