"This is great easy crock pot recipe. Personally, I do prefer to use the bone in skinless thighs for this recipe; because I really think the bone adds a lot of flavor. Also, you could a couple of bone in skinless breasts; however, would cut them in 2-3 pieces similar to the size of the thighs. The combination of the white and dark meat would make for a nice flavor. It is basically just "a drop and turn on" recipe - it's that easy. I prefer to serve this over yellow rice, but many people enjoy serving this over pasta. Just add a nice salad when you come home; and dinner is on the table."

Step by Step Method

Step 1

Chicken and Vegetables ... Add the chicken pieces, onion, peppers, celery, carrots, garlic, and tomatoes to the crock pot and mix to combine.

Step 2

Sauce ... In a bowl, add the tomato paste, broth, wine, seasoning, 1/2 teaspoon salt, and 1/4 teaspoon pepper and mix well. Pour over the chicken and vegetables and mix to make sure everything is coated in the sauce. Add the bay leaf, and push it down in the sauce. Finish by adding the mushroom and olive on top, but do not mix in.

Step 3

Cook ... Cover, and cook on low heat for 6-7 hours. Please remember all crock pots cook differently. I use my oval crock pot, and 6 hrs is usually the time it takes; but just be aware of that. About 30 minutes before serving. Stir everything together - especially those mushrooms and olives which started out on top; and check for any additional seasoning (salt and pepper). Cover and cook another 15-30 minutes. This will give you time to make some rice or pasta to serve with the chicken.

Step 4

Serve ... Stir in the parsley right before serving and serve over rice or pasta. As I said, I like yellow rice; but pasta is equally as good. Make a salad and ENJOY!

This was fabulous. It makes a lot, too. I served it all over angel hair pasta, and the sauce in the crock pot flavored the pasta quite exquisitely. The chicken was so tender and fell off the bones. This is very much a favorite "keeper" recipe that I know I'll serve often in my home. And I'll think of our dear friend Kim every time I make it.

I set out to make as one serve but as I was eating low/no carb I served it over baby spinach leaves and used 1 chicken thigh on the bone and removed the skin and proceeded to cook as per recipe but using a lot more vegetables about half the amounts listed though omitted the celery and used a red and orange capsicum and about half a tin of diced tomatoes which I should have drained the juice of a bit as the sauce was rather watery but still a delicious meal and the chicken just fell of the bone leaving polished bones not a skerick of meat on them.
