"This is a super simple - and, super quick appetizer to make. Actually, it's an 'Old School' recipe, that has been around for years; but, it is always a crowd pleaser. It's not fancy by any means; but, it's delicious. Perfect for a party, game/movie night; or potluck. Cook time doesn't include time for the filling or the tortillas to chill."

Step by Step Method
Step 1
Filling ... Add the crab, cream cheese, cocktail sauce, swiss cheese, and scallions to a small bowl; and, mix until combined. Taste and adjust accordingly - a bit of salt, pepper; or, even a little hot sauce if you want. Then, cover with plastic wrap; and, refrigerate at least 1 hour.
Step 2
Tortillas ... Spread the crab mix on the tortilla; leaving about 1" from one side. As you roll it, the filling will 'squish' out; so, that is the reason for not going all the way on one side. Tightly roll up the tortilla, place on a sheet of plastic wrap and roll up; twisting the ends to seal it tightly. Refrigerate all day or over night.
Step 3
Finish ... Unroll from the plastic wrap; and, cut, a small slice off of each end. Then, cut the tortilla into 1/2-1" slices.
Step 4
Serve and ENJOY! ... Plate and serve - nothing fancy here. It's a great snack, party, game/movie night; or potluck dish. And, they are always a hit! Very 'Old School,' but, that's a good thing.
