"I'm willing to give anything that's easy a go, because these looked way to easy I have to admit I was very skeptical, I'm so glad I tried this caramel recipe because they turned out great! Every microwave is a little different, so you may have to play around until you get it just right, you may have to increase or decrease the cooking time by 15 seconds or so to get the caramels perfect. For my mircowave, Three minutes, 10 seconds gave me the perfect texture. If you want a softer caramel, you may want to decrease the cooking time slightly each cooking period. But even if you’re first batch comes out a bit hard or a bit soft, the flavor is still so good!"

Step by Step Method

Step 1

Butter an 8-inch square pan, or you can line the buttered pan with foil and butter the foil.

Step 2

Melt butter in a large microwaveable bowl (microwave for about 1 minute). Stir in the corn syrup, both sugars and sweetened condensed milk. Continue stirring until most of the sugar is dissolved.

Step 3

Microwave on high for 3 minutes 10-15 seconds. Remove from microwave and stir and scrape down the sides of the bowl. Return to microwave and cook on high for another 3 minutes 15 seconds. Stir in the vanilla.

Step 4

Pour immediately into the buttered dish.

Step 5

Allow to sit for several hours until cooled and set. Cut into squares and wrap in waxed paper.
