"I have found that if you rub kosher salt into the potatoes before baking, you can brush it off afterwards and the potatoes still have a nice salty flavor. Saves on the actual salt intake."

Step by Step Method
Step 1
Preheat oven to 425 degrees.
Step 2
Place parchment paper on a rimmed cookie sheet.
Step 3
Wash potatoes and rub with kosher salt (unless using oil).
Step 4
If using oil, dry potatoes and rub with olive oil, then rub with salt.
Step 5
Place potatoes on parchment paper and bake for about an hour, depending on size. (Check smaller potatoes at 50 minutes and large potatoes will need over an hour.)
Step 6
Remove from oven and brush salt off with a pastry brush. Serve warm.
