"This is basically a mix, roll and bake recipe so there's not to much effort involved in making these. You should get about 10-12 taquitos using the larger tortillas you can use with smaller 4-inch tortillas (sold at Target) also and that will give you a couple more"

Step by Step Method

Step 1

Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine all ingredients listed before tortillas. Mix thoroughly until well combined.

Step 3

Warm the tortillas in the microwave to soften, about 20-30 seconds. Place a tortilla on a work surface. Spoon 2-3 tablespoons of the filling mixture down the middle of the tortilla. Roll the tortilla up tightly around the filling.

Step 4

Place seam-side down on a baking sheet. Repeat with the remaining tortillas and filling, spacing the assembled taquitos evenly on the baking sheet. Brush the tops lightly with oil or spray with cooking spray.

Step 5

Bake 15-20 minutes or until crisp and golden brown. Serve with sour cream and additional salsa, if desired.

I made a double batch to freeze so I can grab them out of the freezer and pop them in the oven for a few to heat up. I loved the taste of these little buggers and I plan to keep these on hand a lot of the time for something to grab when I am wanting to snack. Great tasting and quick to make. A winner for me!
