"A simple marinade for beef skewers. It is easy, inexpensive and quick to prepare; but, plan ahead, the beef is best marinated 4-8 hours; in fact, I let it marinate over night. Grill and garnish with chopped peanuts; and, a mix of the sauteed peppers and onions. Makes for an easy, quick and healthy dish. I usually make skewers of cremini mushrooms, and serve over brown rice. You could always make 'mini' skewers as appetizers."

Step by Step Method

Step 1

Steak and Marinade ... Add all the ingredients to a ziploc bag or a non-reactive bowl (glass) and mix well. Then, add in the meat, toss to combine and seal the bag, or cover with plastic wrap. Marinate, 4 hrs to overnight. Once the steak has marinated ... remove from the refrigerator and marinade, transfer to a plate to take the chill off.

Step 2

Skewers ... If grilling outside, make sure to soak you skewers if they are wood; if inside, don't worry about it. Skewer the meat, making sure not to over crowd, or push them too close together. If they, are all 'squished' together, they can't cook evenly, they need a little breathing room - even spacing is important.

Step 3

Grill ... Indoor or Outdoors, both work well. Brush the skewers with the chili sauce on all sides, then grill on medium high heat until you get a nice sear on each side; about 8-12 minutes in total (but this can vary depending on the side of your steak cubes; but also on how you like your steak cooked). Make sure to brush the chili sauce on a couple more times during cooking. If you decide to add some grilled mushrooms, you can start them at the same time. I usually just brush with olive oil, salt and pepper. Mushrooms or any other vegetables will take about the same cooking time.

Step 4

Vegetables ... As the steak cooks, saute your 'pepper and onion relish;' they cook very quickly. I like a non-stick pan, so you use less oil. Bring the pan to medium high heat, add 1 teaspoon of oil, peppers and onions, and saute 3-4 minutes until tender, but still have a little crispness; then, add in the scallions just to heat through, and set off to the side.

Step 5

Finish ... Plate up some rice and top with the steak, and vegetable skewers if you decide to add them. Pull off of the skewer and garnish with the the peppers and onions. Finish with the chopped peanuts and fresh cilantro. ENJOY!
