Easy 5-Ingredient Vegetable Lasagna
"Many people believe that vegetarian dishes are time consuming to prepare. Here's one that is quick and easy. Use it whenever you need or want a delicious meatless meal. Use the tofu alternative if you want a vegan lasagna. From the Vegetarian 5 Ingredient Gourmet."

- 8 ounces lasagna noodles (no-boil)
- 15 ounces part-skim ricotta cheese (or 1 pound soft tofu, drained and mashed)
- 3 cups vegetables (lightly steamed vegetables, any veggies ie broccoli, mushrooms, spinach)
- 8 ounces part-skim mozzarella cheese, grated
