Step by Step Method
Step 1
Filling ... Add the ricotta, fruit, orange zest, brown sugar, and a pinch of salt to a small bowl; and, mix to combine. Apricots and cherries are my favorite; but, figs, cranberries, dates, blueberries, mango, etc., are all delicious - use your favorite fruit. Cover with plastic wrap and refrigerate 30-60 minutes to chill.
Step 2
Celery ... Cut the celery in 3" pieces, wipe clean; then, stuff with the filling. Then, sprinkle the nuts over the top.
Step 3
Serve and ENJOY! ... They are a perfect snack; but, also great as appetizers for a potluck, dinner party, or BBQ.
