"Excellent recipe. Similar to shortbread but just a bit different. I have made these every year since 1992 for my Christmas goodies. This recipe is from BC Woman to Woman magazine by Mrs M.H. Wilkinson. I give full credit to her as I have not changed a thing. It is excellent the way it is. You get 8 to 10 dozen cookies"

Step by Step Method

Step 1

Heat oven to 375f

Step 2

Cream together the butter, sugar and beaten egg

Step 3

Mix together the flour and salt

Step 4

Using a wooden spoon sift flour into the butter mixture, stir together working in the almonds

Step 5

Divide the dough into 4 pieces and make each piece in to 2 inch sausage. Wrap in plastic or wax paper and refrigerate until firm

Step 6

Cut the dough into 1/4 inch slices and place 1" apart on an ungreased cookie sheet

Step 7

Bake in the center of the oven for 10 to 12 minutes until they are the colour of shortbread. Do not overbake - they should not be brown.

Step 8

Store in tins in the fridge or freezer
