"I admit to NOT being the biggest curry fan. However, I came across this a few months ago, and made it for myself and a friend for lunch - we loved it. The sauce is amazing, and the subtle flavors of the curry was just delicious. I changed up the recipe a bit by adding; baby spinach, and crispy celery to give a little texture to the sandwich; and finished it off with chopped tomato. Perfect for a lunch or light dinner. Maybe some fries, or cup or soup on the side would be nice. Cook time depends on how long you plan to marinate the chicken."

Step by Step Method

Step 1

Chicken ... Add the chicken to a ziploc bag or a bowl, along with the curry powder, salt, and pepper. Close the bag and squeeze to combine. You can do this in a small bowl as well. Make sure that all the chicken is coated. Let it marinate at least 30 minutes up to 4 hours. The longer the better in my opinion.

Step 2

Sauce ... This is really made best in advance. It's actually better the next day, if possible. It's full of flavor; and, is wonderful on burgers or sandwiches as well. In a small non-stick pan, add a splash of olive oil, and bring to medium heat. Add the onion slices and cook a couple of minutes on each side, until they are tender; and, lightly golden brown. Add the garlic the last minute; and stir until combined. It is ok if the onion slices break up - and keep an eye on it - you don't want the garlic to burn. Remove from the heat; and, add to a blender, or small food processor. Then, add the roasted red peppers (I used the ones from a jar), cucumber, yogurt; and, a splash of sriracha. Pulse until you get a smooth texture. Lightly season with salt and pepper, and pulse again. Taste until you are happy with the flavor. Don't be afraid to add more sriracha or more red peppers if you want. Transfer to a small bowl, tupperware container, or measuring cup; and refrigerate until ready to use. Overnight is best; but, at least a few hours.

Step 3

Chicken and Onions ... Add a bit more olive oil to that same saute pan, and bring to medium high to high heat. Add the chicken and onions, and saute, stirring often, until the chicken is lightly golden brown and the onions are tender. It should take about 4-6 minutes until the chicken is done. Remove from the heat, and add the celery, raisins, scallions, stir; and, cover to keep warm.

Step 4

Pita or Flatbread ... Lightly warm the pita or flatbread; this is not necessary, but I like too. I prefer flatbread because you can just fold it up vs stuffing the pita. But, that is up to you. You can warm them in the microwave - just wrap in a damp paper towel, or cloth towel; and, cook on medium low for 10-20 seconds.

Step 5

Sandwich ... Add, some of the sauce, spinach, warm chicken and vegetables; topped with more sauce, and finish with the tomatoes. Fold over and secure with a toothpick; or, you can also wrap in parchment or foil too.

Step 6

Serve and ENJOY! ... A great sandwich for lunch or dinner. If you are like me, and a bit skeptical about curry; you will love this. Just a hint of curry; which blends with the creamy spicy sauce. Make sure to add the spinach; and, don't forget to garnish with those tomatoes. Add a cup of soup or fries, for a nice lunch or dinner.
