Curried Cabbage
"This is not highly spiced but you can always increase the curry powder for more heat. I also add garam masala and dhana jera (mixture of coriander and cumin) for more of an Indian flavour."

- 5 slices of bacon (I use low sodium)
- 5 tablespoons virgin coconut oil
- 1 medium onion, chopped
- 1 1/2 teaspoon curry powder
- 1 small cabbage, shredded
- 1 teaspoon lemon pepper
- 1/4 cup chicken broth (if needed)
- 1/4 to 1/2 cup toasted coconut
What You Will Need
No special items needed.
Step 1
Fry bacon in large skillet until crisp and place on wire rack or between paper towels and set aside.
Step 2
In same skillet over medium heat add coconut oil, onion and curry powder and saute for 2 - 3 minutes.
Step 3
Add shredded cabbage and lemon pepper.
Step 4
Cover and cook, stirring occasionally until cabbage is soft; add a wee bit of broth as needed.
Step 5
Break bacon into pieces and stir into cabbage along with salt to taste.
Step 6
Garnish with toasted coconut and enjoy!
