Cucumber, Goat Cheese, and Alfalfa Sprout Sandwich
"One of my favorite quick go to lunches. These are also perfect for picnics, the beach; or, for traveling. Tomato and/or avocado are also both very good, if you want to add them to the sandwich. I originally made these using a whole wheat english muffin; I even served them open face as well, if you want something a bit lighter. Today, you can buy those "thin sandwich bagels," which are also very nice for this type of sandwich. However, you want a bread that is whole wheat, or a whole grain."

Step by Step Method
Step 1
Pickled Onions ... This is a quick 10 minute pickle. Add the onions (separate the rings) to a small bowl, along with the vinegar, sugar, and water. Stir to combine. Let them marinate 10 minutes, then drain.
Step 2
English Muffins ... I like mine toasted, which is personal preference. I like to take these to the beach, fishing; or, when I travel. I have found that they hold up better when toasted; and, the english muffins are easy to 'pick up' and 'eat' vs other buns or bread. Also, they are easy to find at any local grocery store.
Step 3
Cucumber ... You don't need too many cucumber slices for this sandwich; so, I tend to buy the classic cucumber, not a seedless one. Either way, both are fine. But when using a classic cucumber, I usually cut lengthwise, then lightly seed. Then, cut in slices and lay them out on a paper towel to 'dry,' maybe 5 minutes is all. This will prevent the sandwich from getting soggy.
Step 4
Sandwich ... Spread 2 tablespoons (1 per side) of the softened goat cheese on both the toasted english muffin halves, and top with the cucumber slices (about 5-7) seasoned with pepper, a few pickled red onion rings, sprouts, and top with the other muffin half.
Step 5
Serve ... As I said - these are fantastic served open face, or as a sandwich. Also, they can be served for for lunch, a special luncheon, shower, party, snack or light dinner. Don't forget, these travel well. Perfect for picnics, or for a road trip. Just wrap in parchment paper then foil and add to your cooler.
Step 6
And, thin slices of avocado or tomato are also really good added to this; but, personally I like it as is! ENJOY!
