Cucumber and Orange Salsa

"I think I first saw this in a 'Woman's Day or Family Circle Magazine.' And after a little tweaking; I really enjoy this recipe. It is so easy; yet, it goes so well - with so many dishes. I first served it with salmon; but, I have since served this over pork and chicken as well. I prefer to compliment this salsa with a mojo or cuban type of seasoning on the protein. I have a recipe here on RecipeZazz - 'Quick and Easy Cuban Marinade;' and, this is perfect to serve with this salsa. Also, this salsa is wonderful served over a simple side of rice."

Step by Step Method

Step 1

Cucumber ... It isn't necessary to use a seedless cucumber; but, it is preferred. A regular cucumber will work just as well, but make sure to seed them well. Once the cucumber is diced, add to a colander, lightly salt, and toss. Then, set the colander over a bowl to drain. Let them set 5-10 minutes. This will draw out the liquid from the cucumber - otherwise, your salsa would be very watery.

Step 2

Oranges ... You can use your favorite oranges for this recipe (I like to use a mix); or, you could always use canned mandarin oranges if you can't get fresh. And, many stores carry orange segments in the fruit produce section of your grocery store, which are really a time saver.

Step 3

Finish ... Add the drained cucumbers, oranges, onion, mint, sugar (if necessary), olive oil, and a bit of pepper to a bowl, and toss to combine. Taste, and season again with any additional sugar and pepper if necessary. The amount of sugar really depends on how sweet your oranges are. The cucumbers were already salted; so, there is no need to add additional salt. It is best to cover the bowl with plastic wrap, and refrigerate 15 minutes before serving, if you have the time.

Step 4

Serve and ENJOY! ... As mentioned, this is excellent served with pork, chicken, or seafood. Especially cooked in a cuban or citrus type of marinade. My "Quick and Easy Cuban Marinade," works great with this salsa. I also like to add a simple side of rice as well. It's a nice light and refreshing salsa.
