Step by Step Method

Step 1

Mix together the potato flakes, parmesan, thyme, sage and pepper in a large plastic bag.

Step 2

Place butter in a shallow dish.

Step 3

Dip chicken pieces in butter, and then toss them in the dry mixture.

Step 4

Shake bag well to make sure the chicken pieces are well coated.

Step 5

Coat a rimmed baking sheet with non-stick spray.

Step 6

Place breaded chicken pieces on baking sheet.

Step 7

Bake uncovered in a 375 degree Fahrenheit oven for about 1 hour, until juices run clear.

I scaled back for 2 and used what we call a Maryland cut (thigh and leg kept intact) and allowed 50 minutes to cook at 175C fan forced and as our instant potato does not come flaked but is a fine powder I double crumbed them and therefore used some extra butter and also used a sharp cheddar instead of the parmesan and the result was juicy and very juicy and flavoursome chicken.
