"I've made this casserole dish more times than I can count. It came into my recipe box about 40 years - from where, I can't remember. It's a great standby recipe for baby showers, bridal showers, and potluck parties. It can be made and assembled earlier in the day to free up those precious last few minutes to tend to other details."

Step by Step Method

Step 1

Combine the first 10 ingredients in a large bowl.

Step 2

Mix together the mayonnaise, water and chicken stock.

Step 3

Add the mayonnaise mixture to the chicken mixture and mix well.

Step 4

Turn into a lightly greased 9 x 13 baking dish. Top with 2 c. crushed potato chips (or bread crumbs).

Step 5

Bake at 450 for 20 minutes, until hot and bubbly throughout. (Can be baked at a lower temp -- but extra time will have to be added)

Step 6

Prep time does not include the time to roast the chicken.

Great casserole!! It was absolutely delicious. We loved the crunchy chips on top. Using a roasted chicken and using the broth is a must, in my opinion. That is where a lot of the delicious flavor of this casserole comes from. The only change I made was making my own cream of chicken soup and adding a pinch of fresh parsley. Thanks Bobbie, this casserole was awesome!
