"This is the best scalloped potatoes I have found for the crock pot. I have made this with and without cheese and ham; and it seems to work well either way. Obviously, your crock pot can make a difference in the cooking times; but it is so simple, and always seems to come out delicious. Great for parties and entertaining when you don't want to tie up your oven. The recipe below includes both ham and cheese; but, you can obviously make this recipe without."

Step by Step Method
Step 1
Crock Pot ... Butter the inside of your crock pot, sides and bottom.
Step 2
Potatoes ... Add a layer of the potatoes, 1/3 of them; followed by 1/2 of the ham, 1/2 of the onions, and 2 tablespoons of cheese. Then another layer of potatoes, rest of the ham, onions, and 2 tablespoons of cheese, and finish with the potatoes.
Step 3
Sauce ... Add the thyme, nutmeg, salt and pepper to the cream and mix well. Pour over the potatoes. And save that 1/4 cup remaining cheese - that will be added at the end of the cooking process.
Step 4
Cook ... Cover and cook on low 5-7 hours, older crock pots may take a bit longer. You can cook on high for approx 4 hours. Both seems to work well, but I prefer to use the lower heat. About 4 hours into cooking, I like to stir the potatoes if possible. If not, that is ok. But, as soon as you get home, if you have been out - give it a stir. Then cover and continue cooking.
Step 5
Serve ... About 10-15 minutes before serving, season with additional salt and pepper and the remaining 1/4 cup cheese. Cover just until melted, about 5 minutes. Garnish with chives and serve. ENJOY!
