"Some crock pot meals require a bit of time consuming preparation. This dish does not. It's great if you want to take a few minutes and throw everything into the crock, plug it in and go on with your day. You'll come home to a delicious, hearty soup. Simply prepare all your veggies the night before. Keep the diced potatoes in water to keep them from turning brown. You'll be adding the water to the crock so no nutrients will be lost. Feel free to add your favorite veggies. I think mushrooms could be a delicious addition."
